La Soupière Malatang, a new customizable hot pot spot on Ste-Catherine West, opened in February and is already drawing crowds with its solo-dining take on Sichuan cuisine.

Unlike traditional hot pot, malatang lets diners build their own bowls from scratch. You grab a large copper bowl and tongs, then select from a wall of refrigerated add-ins: noodles, fish cakes, meats, vegetables, and shellfish. Want only one shrimp and one calamari ring? Take one of each. Want multiple types of noodles? No problem. After filling the bowl, staff weigh it on a scale and price it at $4.99 per 100 grams, meaning your final bill depends entirely on what you packed in.

Then comes the broth — free. Choose from roughly 10 varieties including Singaporean laksa (which one diner found delicious if a touch salty), golden pickled cabbage, tomato, miso, bone, tom yum, rosé, mala spicy, shacha, and Sichuan spicy dry mix. An add-in bar with chilli sauce, coriander, lime, and garlic lets you customize heat and flavour further.

The restaurant is clean and busy, with about a 20-minute wait once seated. Staff are accommodating and patient, and water comes to every table. One visitor found the serving size enormous — a smaller bowl option might help those who don't want that much liquid — but praised the flexibility and variety. The menu easily accommodates different dietary needs, from all-shellfish to all-vegetable builds. Diners who leave room can snag a free soft serve ice cream for dessert.
