Bar Butcher brings wallet-friendly steakhouse dining to Bay Street at former Miller Tavern

Bar Butcher has taken over the old Miller Tavern space at the base of Bay Street, joining the downtown core's post-pandemic steakhouse boom—but with a markedly different business model than its pricier neighbours Harbour 60 and the Butcher Chef.

Co-owner Michael Dabic spent 10 years as general manager at Harbour 60 before operating the Butcher Chef and Oliver's in Oakville. Culinary director Derek Von Raesfeld previously worked in Italian trattorias, French bistros, and New York bars. Head chef Michael Pallister comes from Richmond Station. The trio has designed the menu to prioritize quality without the expense-account price tag.

A 12-ounce Alberta strip loin costs $76 here versus $155 at the Butcher Chef just doors away. A six-ounce version runs $38. Other proteins like confit duck leg and lamb shank both come in under $30. Traditional sides—French beans, beef tallow fries, five dipping sauces—anchor the plate.

The other half of the menu ventures into gastropub territory: ceviche, cevapi, sophisticated pastas, salads, sandwiches, fish and chips, and schnitzel. Cocktails are sorted by mood—boozy, bright, indulgent, or savoury—with options ranging from a smoky strawberry-infused mezcal sipper to a cacio e pepe martini.

Whether Bar Butcher signals a shift away from Bay Street's over-the-top dining culture or simply carves out its own lane.
