Lorenzo Loseto picks One Night Only's loaded baked potato as Toronto's best pizza slice

Toronto Life asked five prominent city chefs to name their favourite pizza slices, and the selections span everything from loaded baked potato to understated cheese—capturing the breadth of pizza styles now thriving in the city.

Lorenzo Loseto, chef and owner of Michelin-recognized fine-dining institution George, championed One Night Only's loaded baked potato slice as "one of the best—if not the best—in the city." Loseto praised the New York–style slice for its light, airy crust and super-crispy finish. The garlic-and-basil cream base sits below smoked mozzarella, paper-thin seasoned potatoes with edges crisped like kettle chips, and house-pickled jalapeños on the spicy version.

"They treat pizza dough with the same patience and care as a high-end artisanal sourdough bakery," Loseto said, noting the cold fermentation process runs 72 hours, creating a crust that is "exceptionally light, intensely flavourful and easy to digest." The shop sources premium ingredients throughout, allowing the dough to support toppings without sagging. One Night Only operates as a cozy corner spot with zero pretence—an open kitchen where diners can watch the team work and eat standing on the sidewalk.

Lia Caufin, who has climbed from line cook at Michelin-awarded Rasa to executive chef of both Rasa and Sara, picked Fresca's classic cheese pizza. "I love a classic cheese pizza—I want to taste the quality of the ingredients," Caufin said. "If the cheese, dough and sauce are all great, that's all you need for an amazing slice." Fresca's version delivers a New York slice with not-too-sweet tomato sauce, properly melted cheese, and dough given enough time to develop flavour.

Toronto's pizza landscape now includes wood-fired Neapolitan pies, foldable New York slices, Detroit-style deep-dish, and decadent Roman slabs, each drawing devoted followings.
