The Night Baker closes its original College Street location after seven years

The Night Baker, the popular Filipino-Canadian bakery known for its soft and chewy ube halaya cookies and rotating menu inspired by Filipino desserts, is closing its original College Street location on Wednesday, July 29.
Owners Mitchell and Leanne Cabrera opened the bakery at 825 College St. in 2019 after starting the business in 2016. The couple, both with backgrounds in chemistry, built it from just the two of them into a three-location operation. But maintaining all three stores while raising their young son became unsustainable.
"Too much time was being taken away and our baby will only be this young for so long," they wrote in an Instagram post. "So no, it wasn't a purely financial decision but a personal one. Choose happiness y'know?"
The final shift at the College Street location runs Wednesday from 2 to 10 p.m. The bakery's other locations at 405 Danforth Ave. and 5361 Yonge St. in North York will remain open. The couple said they receive franchise inquiries almost weekly but are not ready to franchise and stressed that The Night Baker is not for sale.
Another bakery has already purchased the College Street space, though the incoming business's identity has not yet been announced. The Night Baker said the buyer will make the announcement when ready, adding that the neighbourhood will be "in good hands." The bakery became known for signature offerings like the Ooh Bae cookie and creative desserts drawing from Filipino flavours such as buko pandan, sans rival, suman, and turon.
