New Mexican Restaurants Are Popping Up Across Toronto
From Liberty Village to the Beaches, a wave of fresh spots—Wilbur Taco Co., Santa Madre, Masa—are bringing tacos, tortas and regional flavours to the city.

Mexican restaurants have been opening across Toronto with quiet momentum, and the trend shows no sign of slowing. Whether it's the summer heat or year-round craving, the city's residents are fueling a mini boom in taco spots, tequila bars and regional Mexican kitchens.
Wilbur Taco Co. recently opened in Liberty Village as a sister location to the decade-old King West stalwart Wilbur Mexicana. The new spot ditches the original's sterile interiors for a weathered aesthetic—corrugated metal facade, checkerboard floors, wood rafters and a yellow illuminated menu. The menu stays true to the original's DNA: classic tacos, quesadillas, nachos and burritos.
On the east side, Santa Madre has already built an evangelical following despite launching with no website or social media. It's the latest venture from the team behind Beaches gem Holi Taco. Head to its seafoam storefront at 1437 Gerrard St. E. and you'll find vibrant wall murals and a menu spanning tacos, tortas, treats and weekend brunch.
At Stackt Market, Masa opened a standalone stall after operating as a ghost kitchen and food truck through summer 2025. The concept plays on duality: "100% Mexican recipes" made with "100% Canadian ingredients." The open-air shipping-container setting offers sunlight and proximity to viral favourite Afro's Pizza, which also recently opened there.
The wave isn't stopping. Huichol, promising "authentic Mexican flavours," is slated to open on St. Clair West later this month. And La Barbacha, a Kensington favourite known for its viral birria pizza, has recently relocated to the corner of Queen West and Roncesvalles.
It's going to take some time to sample all the new Mexican cuisine popping up around the city, but the city's residents seem ready for the challenge.
