Fairmont Pacific Rim's Botanist Bar is transforming into a showcase of Canada's cocktail culture this summer through a series of one-night pop-ups called Sips Across Canada.
The final instalment arrives Monday, July 6, when Toronto's celebrated Civil Liberties and Suite 115 take over Botanist's bar program from 5 to 8 p.m. Civil Liberties was recently ranked No. 4 on Canada's best bars list, while Suite 115 holds the No. 13 spot. The takeover is first-come, first-served — no reservations required.
The concept invites some of Canada's most celebrated bars to bring their expertise directly to Vancouver rather than asking guests to travel across the country. Located inside Fairmont Pacific Rim at 1038 Canada Place, Botanist Bar has built an impressive reputation over the years, appearing on Canada's 100 Best Bars list and earning recognition from North America's 50 Best Bars.
Under the leadership of creative beverage director Grant Sceney and his team, Botanist has become known for exceptional drinks and constantly pushing the conversation forward. The collaborative atmosphere of these takeovers feels like an exchange of ideas between top beverage professionals, giving Vancouver guests access to cocktails and techniques they might otherwise need a plane ticket to experience.
