The beloved Fraserhood bistro relaunches with Gaia House at the helm, new chefs, and a refreshed menu built on French classics.

Les Faux Bourgeois, the Fraserhood institution that spent 18 years building its reputation, officially reopens its doors July 8, under new ownership and leadership.

Gaia House, the team behind award-winning restaurants Nammos Estiatorio, Selene Aegean Bistro, and AMA, took over the bistro after a refresh. Co-founders Petro and Yianni Kerasiotis said the redesign reflects "a continued commitment to building on what guests already loved."

"From the kitchen to the floor, our team has poured love into every part of this place," they said. "July 8th is a celebration of the change, but also what came before."

The kitchen is led by co-chefs David Casses and Brent Thornton, who bring classical French technique. Casses previously cooked at Michelin-starred Restaurant Sat Bains as well as Joe Beef and Alo. The menu blends returning staples with new additions: expect fresh seafood and oysters from the raw bar, including Torched Prawn with spicy Clamato dressing and King Salmon with wild herb sauce.

Petits Plats feature Escargot en Cocotte and Tartare de Boeuf alongside new dishes like Oeuf Mayonnaise with trout roe and white anchovy. Grand Plats include Steak Frites with sauce au poivre, Duck Bordelaise with pomme pavé, and Moules Frites in a bouillabaisse broth. The French Onion Soup returns this winter as a seasonal special. Desserts include Beignets au Pommes with sortilège glaze and Mousse au Chocolat with poached pear.

Founder and owner Andreas Seppelt will remain involved on the front-of-house team. Georgio Yacoub, previously at AnnaLena, ELEM, and Burdock and Co., steps in as general manager. Dylan Riches oversees the cocktail and wine program with bistro-inspired creations like Elderflower Pastis, Truffle Martinis, and Bourguignon Highballs. A late-night menu is expected to launch later in July.
