An Sang brings Vietnamese breakfast culture to Calgary's Red Mile
A new restaurant on 17th Avenue focuses on breakfast dishes that sell out early in Hanoi—pho, sizzling beef plates, and Montreal-inspired poutine made with pho gravy.

An Sang occupies the 17th Avenue S.W. spot that once held Ramen Taka. The name translates to "eat breakfast," and that is precisely what the restaurant does.
Owners Danny Truong, Nin Dang, and Chef Eric Nguyen built the menu around Vietnamese breakfast culture, where the most important meal of the day features steaming bowls of pho, sizzling beef plates, and other dishes that often sell out early. "You have to go really early," Truong told Dished. "If you don't eat early enough, you won't get the soup."
The signature dish is the Bò Né—sizzling plates loaded with sliced Angus beef, eggs, Vietnamese sausage, and house-made pâté, served with bread, hash browns, and Laughing Cow cheese. The Pho-tine, named for Chef Eric's three years in Montreal, tops crispy fries with pho-soup gravy (thickened with tapioca starch), grilled beef, green onions, and cheese curds. On drinks, Truong recommends the Salted Coffee—a strong Vietnamese brew made with Robusta beans and topped with sweet and salty foam.
Truong emphasizes that Vietnamese food requires care and technical skill. "I want the community to understand that Vietnamese food is not this cheap food," he said. "It's actually very technical, and quality ingredients go into it."
