Nomiya is gone. In its place, Nom—same ownership, same location at 3803 Calgary Trail NW, same spirit, but a completely reimagined approach to Japanese dining.
After 16 years as a locally-owned ramen and udon shop serving a deep bench of noodle dishes, Nomiya's owners are taking a risk. They're calling it "a grown-up version of what we've always been. The same people, but a new experience."
Owner Wing is still finalizing the menu in soft-opening phase and is staying deliberately quiet about what will land on plates. "Really good food with Japanese ingredients" is all the description offered on Instagram—which is both honest and impossibly vague. No dishes have been teased online. The mystery is the point.
Nom is currently taking dinner reservations only: 5:30 to 9 p.m. most weekdays, extending to 10 p.m. Friday through Sunday. Lunch service is coming soon but hasn't launched yet. The restaurant is in the soft-opening phase, meaning service will continue to evolve before an official launch date is announced.
For regulars who spent years hitting Nomiya for quick bowls of ramen after work or weekend udon runs, Nom signals a shift toward slower, more deliberate dining. Whether that version of the restaurant will hold the same place in the neighborhood's rotation—but the foundation is solid, and the team knows how to execute.
