Sahni, a new restaurant led by celebrity chef Vikram Vij, is opening beneath the Union Hotel in Toronto's Financial District in January. It is Vij's first Toronto kitchen; he is known for his acclaimed Vancouver restaurant of the same name.
Vij will serve as Sahni's culinary director. The menu draws on Gujarati and East African spices, techniques and dishes, and mixes vegetarian and meat dishes with fresh breads, rice and traditional Indian sweets.
Kevin Slean, general manager of the Union Hotel, said the menu honours the migration history of Gujarati families who moved to East Africa over generations. "Over generations, many Gujarati families migrated to East Africa, carrying their traditions and recipes with them; these migration journeys are the foundation of Sahni," he said.
The menu is still being finalized, and the hotel is searching for an executive chef with a deep understanding of both cuisines who can translate Vij's vision.
