Eggslut to open first Vancouver location

Eggslut, the Los Angeles breakfast destination founded in 2011, is bringing its first Vancouver location to Alberni Street later this year. Signs have gone up at 1136 Alberni St., steps away from other restaurant heavyweights like Din Tai Fung, Paris Baguette, and Touk.
The brand built its reputation on an elevated take on classic breakfast sandwiches and has since expanded throughout the U.S., U.K., Japan, and Australia. Co-owner Andy Lee said the concept started with a simple idea: "take something familiar and make it exceptional."
The Vancouver outpost is being developed through Westrich Hospitality with a local-first mindset. Adam Flook, development lead, emphasized the approach as a long-term investment in the market. "We've partnered with Canadian suppliers, hired a Canadian team, and approached this as a long-term investment," he said. While the brand carries global recognition, the team is delivering an authentic Eggslut experience rooted in the local community.
An exact opening date has not been announced, but signage indicates the location will launch this year. The restaurant is hiring and preparing the space for its debut.
