Honey Salt celebrates B.C. salmon season with grilled king salmon and vinyl records

The Parq Casino restaurant is featuring wild B.C. King Salmon this summer and hosting an Off The Record Vinyl Party on July 31 with live paella.

Every summer, wild B.C. salmon returns to restaurant menus across the province, and this year is especially exciting—local fishers expect the strongest Fraser River sockeye return since 2018. Honey Salt is among the participating Vancouver restaurants celebrating the seasonal catch alongside Apollonia Greek Restaurant, Carlino, June, Lift Bar Grill View, Published on Main, Restaurant Kavita, and Savio Volpe.

Honey Salt's Grilled Wild BC King Salmon arrives with Israeli couscous, zucchini, roasted broccoli, roasted tomatoes, and garlic butter. The preparation is intentionally simple, letting the rich flavour and firm texture of the fish shine. The restaurant also serves Crispy BC Halibut Bites with tartar sauce, spicy mayonnaise, and fresh lemon, plus a Cacio e Pepe Gnocchi with forest mushrooms, caramelized shallots, Parmigiano Reggiano, and black pepper.

For dessert, the seasonal Okanagan Peach Pie pairs caramelized peaches and flaky pastry with vanilla gelato, while the Society Chocolate & Banana Cake—layers of banana cake, milk chocolate mousse, and chocolate cake finished with a glossy dark chocolate glaze—is rich enough to share.

Honey Salt is also hosting its Off The Record Vinyl Party on Friday, July 31 from 3 to 9 p.m. The $45 ticket includes a welcome sangria, small plates, and a serving of the restaurant's giant outdoor paella, which will be cooked fresh right on the patio throughout the afternoon. Local DJs, vinyl vendors, and collectors will transform the patio into a browsing and trading hub. Reservations can be made by emailing [email protected].
