At Sushi Mahana's limited-run Sake Lounge in Lower Lonsdale, sake becomes something far more complex than the small ceramic cup served alongside sushi—a guided journey through regional water, rice polishing, fermentation methods, and centuries of Japanese brewing tradition.

Held on Monday evenings throughout July, the intimate experience is hosted by owner Yuki Aida, who leads guests through five carefully selected Japanese sakes paired with seasonal dishes designed to reveal how dramatically sake changes alongside food. The evening is educational without feeling formal. By the final glass, guests understand that sake can be every bit as diverse and nuanced as wine.

For Aida, the experience is about bridging two homes. "British Columbia is blessed with incredible natural resources," she says. "Just as I carefully select exceptional seafood from Japan, I also want to celebrate the amazing ingredients grown and harvested here in B.C. My goal is to bring the best of both worlds together through Japanese cuisine and a farm-to-table philosophy."

The tasting introduces five contrasting expressions of sake, from the elegant Gassan Junmai Daiginjo to more traditional Yamahai and Kimoto styles. One lesson centres on Hiroshima's soft water, which creates delicate, refined sake but requires slow fermentation techniques. Guests also encounter Fukucho, produced under the direction of Miho Imada, one of Japan's best-known female toji (master brewers), whose work blends traditional craftsmanship with modern innovation.

The menu reflects Aida's philosophy of connecting Japanese culinary traditions with B.C. ingredients: B.C. spot prawns with orange and shiso, uni with silken tofu and irizake, savoury hand rolls, Wagyu, traditional kasujiru soup made with sake lees, and ceremonial-grade matcha panna cotta paired with lavender umeshu. Each course has been designed to complement the sake in the glass, demonstrating how different flavours, textures, and levels of umami transform the tasting experience.
