Parker Rooftop is opening its summer menu with Japanese-inspired techniques, pristine sashimi, and flame-seared Aburi sushi paired with bold cocktails and unobstructed views of downtown Vancouver and the harbour.
Located on the ninth floor of The Parker Hotel at 1379 Howe Street, the rooftop space leans into sharing plates designed for social dining. The new menu features expertly grilled steaks accented with yuzu, miso, truffle, ponzu, and jalapeño — premium local ingredients woven through Japanese flavour profiles.
The cocktail program matches the food in ambition. The house team crafts drinks like the zesty Midnight Margarita and the sake-anchored Demon Killer. For guests skipping alcohol, a rotating lineup of zero-proof cocktails includes alcohol-free negronis, espresso martinis, and peach bellinis.
Golden Hour runs daily from 3 to 6 p.m., featuring a feature-priced menu with craft beer, signature cocktails, and small plates — shishito peppers, truffle fries, chicken karaage, shrimp tempura. The full summer menu is available from 3 p.m. until late daily.
