Sula, the Vancouver Indian restaurant that has hosted celebrities like actress Priyanka Chopra, just launched a seven-course Spice Route Tasting Menu at its Davie Street location for $48 per person — a culinary journey across India's regional cuisines.

The menu requires at least two diners and guides guests from India's northernmost reaches to the southern states of Kerala and Tamil Nadu, combining science, art, and traditional cooking across each course. Wine pairings are available exclusively with Indian wines for an additional $30 per person.

The meal begins with a creamy Coconut and Kafir Lime Thukpa — a soup inspired by the cold Himalayas where Sikkim resides — followed by Muradabadi Dal Chaat from Uttar Pradesh: slow-cooked moong dal paired with bright chutneys and crisp wafers for scooping. A Butter Bhuna Guchhi Mini Kulcha arrives next — a flatbread stuffed with Kashmiri morel mushrooms, served with bhuna masala for dipping and noted as a staff favourite — before a strawberry sorbet cleanses the palate.

The main courses include a dish titled Golden Roots and Coastal Waters: charred char served on squash purée with crispy curry leaves on top. The standout is the Nawabi Murg with Fried Raw Banana, inspired by Hyderabad, the capital of Telangana — chicken wrapped in a flaky warqi paratha.

Sula operates three locations throughout Vancouver and recently opened a new café concept in collaboration with Alai Coffee, where the malai pista mocha — a chocolate-meets-pistachio drink — is available. Executive chef Balvant Ajagaonkar, who oversees the Davie location, cites Mogu Fried Chicken on Commercial Drive as his personal go-to restaurant, calling its crispy fried chicken "just perfect with a glass of chilled beer."
