Mandy's Gourmet Salads is opening its first Vancouver location on September 23, at 2202 West 4th Avenue in Kitsilano—marking the Montreal-based chain's first expansion west of Toronto.
Founded in 2004 by sisters Mandy Wolfe and Rebecca Wolfe, the chain began in the back of a clothing store and has grown to 15 locations. The Kitsilano spot, designed with a beach-inspired aesthetic, will be the flagship for the chain's westward expansion.
The restaurant will serve salads, bowls, smoothies, and breakfast items including egg bites and yogurt parfaits, along with a Kitsilano-exclusive offering: the Salmon by the Sea salad. A 16-seat patio will face West 4th. Hours are 8 a.m. to 9 p.m. daily.
A second Vancouver location is planned for downtown near Canada Place, opening later this year.
The Kitsilano opening was announced more than nine months in advance, giving the chain time to fine-tune the space and menu for the Vancouver market.
