Notch8 Restaurant & Bar at the Fairmont Hotel Vancouver has entered a new chapter with a refreshed menu that honors its nearly nine decades of history while showcasing seasonal, locally sourced ingredients.

Under Executive Chef Mike Reid, the restaurant now features breakfast, lunch, dinner, and brunch menus that blend classic French techniques with West Coast produce and seafood. Signature dishes include a rich Seafood Chowder loaded with prawns, salmon, and mussels; Steelhead and Scallops Grenobloise; and heritage French plates like Duck à l'Orange, Foie Gras & Fig Terrine, and Steak au Poivre. Contemporary additions such as Bison Cru and a refreshed Tuna Niçoise with seared ahi tuna reflect the region's modern dining sensibility.

Shareable options include Mussels Frites and Baked Brie en Cocotte. Desserts lean into nostalgia: Baked Alaska and Gâteau Basque offer showstopper finales.

The cocktail program draws inspiration from different eras of the hotel's history, featuring modern takes on pre- and post-Prohibition classics. A new tasting experience called "À Toi!" offers a multi-course journey designed to showcase the kitchen's favourite flavours and techniques. The chic dining room and refined service remain central to the experience—suited for special occasions, Sunday brunch, or an intimate cocktail and dessert.
